COOKBOOK: Now there's a cookbook for butterscotch but·ter·scotch
n.
1. A syrup, sauce, candy, or flavoring made by melting butter and brown sugar together.

2. A golden or tawny brown.
fans. ``The Butterscotch Lover's Cookbook,'' by Diana Dalsass (Buttercup buttercup or crowfoot, common name for the Ranunculaceae, a family of chiefly annual or perennial herbs of cool regions of the Northern Hemisphere.  Press; $17.95), is filled with 60 tempting recipes for creations like Butterscotch Pudding, Buttercotch Fudge, Butterscotch Biscotti Biscotti (plural of Italian biscotto, roughly meaning "twice baked") are crisp Italian cookies often containing nuts or flavored with anise. Traditionally, biscotti are made by baking cookie dough in two long slabs, cutting these into slices, and reheating them to dry , Butterscotch-Pecan Torte, Butter Nut Brittle, Mock Pralines, Butterscotch Shortbread and much more. Several color photos are sprinkled throughout the pages.

``Surprisingly, butterscotch is made of only two primary ingredients - butter and brown sugar,'' writes Dalsass, author of five other cookbooks. ``But butterscotch is a rather amazing food that tastes far more wonderful than the sum of its parts.''

To impart an intense butterscotch flavor into some desserts, Dalsass has added finely ground butterscotch candy. But you can't grind the candy in advance of preparing the recipe as it quickly absorbs moisture from the air, she cautions, adding that it's best to immediately mix it with a dry ingredient (such as flour) in the recipe.

Mail-order sources for the best butterscotch candies, cookies, baked goods, snacks and sauces are also included. One even offers butterscotch curd curd

the proteinaceous part of milk precipitated by rennin. Usually contains some fat when whole milk is used.

DINING OUT

Peyman Afshar, who opened Leila's in Oak Park in June 1999, successfully bringing a distinctively creative menu to outer suburbia, is readying his second restaurant, Purple Basil, for its debut in Calabasas. He plans to open Tuesday, describing the new restaurant's food as ``Amer-Asian.'' Look for such items as Peking Duck Tacos ($10) and Shrimp & Carmelized Walnut Salad ($10) for lunch and Sweet Sake-seared Yellowfin Tuna ($15) and Hoisin Braised braise

Lunch prices will run $5 to $14 and dinner items $5 to $23.

The restaurant will be strongly wine-themed, featuring a beginning list of 150 labels, reasonably priced with a double-wholesale-minus-$1 formula. This means that if Afshar pays $10 for a bottle it will be ticketed at $19. Part of the restaurant's decor is called ``Wine Story,'' a collection of eight hand-carved wood panels.

Purple Basil, occupying the site previously held by a men's clothing store named Gary's in the Calabasas Commons complex, is under the clock tower, next to Hallmark. It has a beer and wine license, will charge a corkage cork·age
