MORIYAMA, Yukiko. A taste of tofu tofu

Soft, bland, custardlike food product made from soybeans. Believed to date from China's Han dynasty (206 BC–AD 220), tofu is today an important source of protein in the cuisines of East and Southeast Asia.

Tofu is one of the healthiest food products available--it is easily digested and is extremely high in protein content. It also is low in saturated fat, carbohydrates, calories and entirely free of cholesterol. Tofu is sold in a variety of ways and can easily be used in both Asian and Western-style cooking. Full-color photographs accompany each step in the preparation of all the recipes here. All categories have been included, from appetizers to desserts.
