Meals to GO.

Homestyle meals-to-go: the convenience of fast food, but are they healthier? Looks can be deceiving.

Dad works. Mom works. They're often too drained by a long day on the job to cook. But parents still want their kids to have a nutritious nutritious /nu·tri·tious/ (noo-trish´us) affording nourishment.

And restaurants like Boston Market Boston Market (known before 1995 as Boston Chicken), headquartered in Golden, Colorado, is a chain of American fast-food restaurants. But, like other fast food chains, KFC's menu doesn't have as much variety as most homestyle meals-to-go operations. For about $6 per person, those places offer the convenience of fast food. But are they healthier? Looks can be deceiving.

Try this quiz, which is taken from items on the menu at heavyweight Boston Market:

b) Parmesan creamed spinach spinach, annual plant (Spinacia oleracea) of the family Chenopodiaceae (goosefoot family), probably of Persian origin and known to have been introduced into Europe in the 15th cent.

c) Meatloaf & brown gravy

Answers:

1. a. Thanks to the dressing and the cheese, Boston Market's Caesar side salad is nearly twice as fatty as its mashed potatoes & gravy, and almost three times as fatty as its corn bread.

2. b. The relish tips the scales at 370 calories. The chocolate chip cookie (340 calories) and the stuffing (310 calories) aren't far behind. The relish also packs a hefty 18 teaspoons of sugar.

3. b. The Parmesan creamed spinach is one of the worst vegetable side dishes we've ever seen. It's got two-thirds of a day's sat fat. You'd have to eat an order of meatloaf & gravy plus an order of ham and cinnamon cinnamon, name for trees and shrubs of the genus Cinnamomum of the family Lauraceae (laurel family). The take-home message: Don't think that everything on a homestyle menu is good for you just because it wasn't cooked in a deep-fat fryer. But--if you're careful--you can put together a decent dinner.

The exception is Koo Koo Roo. With the small California-based chain, you could throw darts at the menu and come up with a good meal. As restaurants scramble to get a piece of the homestyle meals-to-go pie, they'd be wise to copy Koo Koo Roo instead of Boston Market. Koo's dishes have less fat and salt--and more pizzazz and flavor--than the others'. What a treat to find takeout Takeout

Boston Market

The leader of the meals-to-go pack has more than 1,000 stores nationwide. It sold $1.2 billion worth of food in 1996. The Colorado-based chain (go figure) serves up six entrees and some 20 side dishes.

Picks: The 1/4 white chicken (breast and wing) is Boston's nutritional star ... as long as you remove the skin, which removes two-thirds of the fat (see "Good Boston Market Meal," p. 15). The rotisserie turkey breast has less fat, but almost twice as much sodium. What's more, Boston Market--and most other meals-to-go operations--lets you skip the "entree" altogether and assemble your own vegetable plate with three side dishes.

The two best sides: dill dill, Old World annual or biennial plant (Anethum graveolens) of the family Umbelliferae (parsley family), cultivated since at least since 400 B.C. Ditto for the corn, which has just enough margarine margarine, manufactured substitute for butter. It consists of a blend of vegetable oils or meat fats (or a combination of both) mixed with milk and salt. It was developed in the late 1860s by the French chemist Hippolyte Mège-Mouries in a contest sponsored by  to give it a rich flavor. Fruit salad's a go, too, but you can only get it in the summer.

Even the mashed potatoes, which had a little too much butter for a thumbs up, had less fat and salt here than anywhere else.

And you don't have to be a vegetarian to combine any three sides for dinner. The hardest part is deciding which three.

Pans: The only nutritional dud entree is the enormous turkey pot pie. Eat the whole 1 1/3 pounds and you'll have gobbled up 900 calories and more than half a day's fat, sat fat, and sodium. And skip the macaroni & cheese, creamed spinach, and stuffing (no surprises there).

Safeway

Safeway recently introduced Great Meal Combos at its supermarkets that have delis. They go for about $3 per person.

Picks: Try the roasted chicken (skinned, of course). Second best is the roast turkey, which is low in fat but--like all Safeway's main dishes except the chicken--high in salt.

Pans: Forget about the meat loaf and chicken pot pie, unless you're willing to use up half a day's fat on either.

The same goes for the side dishes, which are heavy on the butter, heavy cream, cheese, and whole milk. A one-cup serving of the macaroni & cheese, butternut squash, cheese & bacon mashed potatoes, or creamed spinach uses up at least half a day's sat fat.

Worse yet is the chocolate pudding or gravy. (Safeway counts each as a side dish. Is that smart marketing, or what?) Buy both and you've missed two chances to come closer to the eight to ten servings of vegetables and fruit you should eat every day.

Even the BBQ beans, which have an admirable eight grams of fiber, pack almost half a day's sodium.

Our advice: Bag the sides and hit the salad bar. Or cruise the produce aisle for a salad-in-a-bag and a couple of potatoes or a bunch of broccoli to toss in the microwave (see "Tip of the Month," back cover).

One more warning: The numbers on Safeway's labels look great, but that's just because the serving sizes are tiny. For example, Safeway ads say that the chicken dinner feeds four, but the "Nutrition Facts" on the label give calories, fat, and other numbers for an eighth of a bird.

"Best Bites" get less than 10 percent of their calories from saturated fat and no more than 30 percent of their calories from total fat, except for a few low-car vegetable side dishes that have so little fat that we gave them Best Bites anyway.

Chicken numbers vary little from chain to chain, so we've only listed them for Boston Market. For the numbers on a half-chicken entree, add the quarter white meat plus the quarter dark meat.

Because companies can't say exactly how many people a family meal serves, we used their serving sizes for individual entrees and side dishes. For Safeway, we used the larger servings promised in the ads, not the smaller servings listed on the labels. Within each chain, we've ranked the foods from lowest to highest percent of calories from saturated fat.
