Leatherhead develop new acrylamide testing method. (Informalia).

See there.  method for analysing acrylamide acrylamide /acryl·a·mide/ (ah-kril´ah-mid) a vinyl monomer used in the production of polymers with many industrial and research uses; the monomeric form is a neurotoxin. , a toxic compound recently discovered in a range of cooked and processed foods in Sweden.

In-house validation has been carried out to show that the method performs well, and Leatherhead will be taking part in external validation.

, which is widely used in packaging and water treatment, it was not derived from that source and was being formed during the cooking process. Often being found in baked, fried or grilled foods, acrylamide is a suspected carcinogen and the UK Committee on Carcinogenicity of Chemicals in Food, Consumer Products and the Environment states that exposure to genotoxic genotoxic /ge·no·tox·ic/ (je´no-tok?sik) damaging to DNA: pertaining to agents known to damage DNA, thereby causing mutations, which can result in cancer.
