The concentration of East Coast transplants was a huge factor as well. Opening stores in Seattle, for example, might not work so well. ``People there might not know what Carvel is,'' Hill said. Three launch stores opened in Southern California last year; the first one was in Thousand Oaks, followed by stores in San Diego San Diego (săn dēā`gō), city (1990 pop. 1,110,549), seat of San Diego co., S Calif., on San Diego Bay; inc. 1850. San Diego includes the unincorporated communities of La Jolla and Spring Valley. Coronado is across the bay. and Azusa. Carvel is opening launch stores in Denver and Northern California this year as it builds out in Southern California. The chain currently operates about 500 stores in 37 states. Carvel pulled out of the market in the late 1970s; by 2001, the company was bought by Roark Capital and was concentrated in New York and Southern Florida.
