It brings together three truly local wines, yes, honest-to-goodness L.A. wines, those of nearby Rosenthal, Semler and Jussila. They are paired with a five-course dinner (plus amuse bouche An amuse-bouche, also called an amuse-gueule, is a tiny bite-sized morsel served before the hors d'œuvre or first course of a meal. These, often accompanied by a proper complementing wine, are served as an excitement of taste buds to both prepare the guest for the meal and dessert) by Saddle Peak's chef Warren Schwartz for $99 per person. For those who are unaware, there happen to be some darn good wine grapes growing in and around the Malibu Canyon area. Rosenthal's Malibu Estate is probably the best-known of the three. Its 2001 Newton Canyon chardonnay will be poured with an amuse bouche serving of heirloom tomato An heirloom tomato is an open-pollinated (non-hybrid) cultivar of tomato. Heirloom tomatoes have become increasingly popular and more readily available in recent years. A variety of black grape used to make red wine, notably in Bordeaux and the Napa Valley. 2. A dry red wine made from this grape. [French. and the fifth course of a roasted caribou Caribou, town, United States Caribou (kâr`ĭb ), town (1990 pop. 9,415), Aroostook co., NE Maine, on the Aroostook River; inc. 1859. chop will be paired with the 1998 Rosenthal Newton Canyon Founders Reserve cabernet sauvignon. The Semler Saddle Rock Ranch chardonnay and merlot, both 2001 vintage, will be sipped with passed elk tenderloin, Maryland blue crab blue crab, common name for a crustacean, Callinectes sapidus, found on the S Atlantic and Gulf coasts of North America. The blue crab is a member of the family of swimming crabs known as the Portunidae and is characterized by a broad, semitriangular carapace cake and walnuts-in-endive appetizers. Quite a lineup, wouldn't you say? Obviously already successful enough to make it an annual event. Incidentally, Saddle Peak offers bottlings from all three wineries/vineyards on its wine list. MAKE A NOTE OF IT: An elite wine dinner and auction titled ``Symphony of Wine'' will take place at Otis Chandler's Museum of Transportation and Wildlife in Oxnard at 3 p.m. June 22. Ken Volk of Wild Horse Winery & Vineyards will be honored as maestro of food and wine at the event, a fund-raiser to benefit the New West Symphony's Children's Music Program. The five-course dinner is by three well-respected restaurants: Valentino in Santa Monica, and the Wine Cask and Citronelle, both in Santa Barbara. Dinner wines are from Wild Horse, Joseph Phelps, Nickel and Nickel, Ortman Family, Opolo and Bonny Doon. Highlight auction wines are an 1848 Chateau Lafite-Rothschild and a double magnum of 1955 Chateau Mouton-Rothschild. Information: (310) 748-5289.
