Kickin' baked chicken.


What does your mom She goes to the gym.  really want for Mother's Day? Probably a night off from making dinner.

WHAT YOU NEED 1 whole chicken (approx. 3 lbs., organic chicken is great) * 2 small lemons * 1/2 cup fresh lemon juice * kosher salt kosher salt

Preheat the oven to 400 degrees. Take the chicken out of the refrigerator, and remove the bag of giblets gib·lets

 (ew). Rinse the chicken inside and out with cold water. Let the chicken drain, cavity down, for 20 minutes to bring to room temp. Pat the chicken dry with paper towels. Pour lemon juice all over the chicken (inside and out). Season the chicken with salt and pepper

. Prick the whole lemons all over with a fork and put them in the chicken. Put the chicken on a rack in a roasting pan, and roast it in the oven for an hour. To make sure it's done, insert a meat thermometer in the thigh--it should read 180 degrees. Continue baking, if necessary. Let chicken cool for 10 minutes before carving. Serve this great chicken with a salad (a bagged one will do)!, some mashed potatoes (buy them at the pre-made food counter, or make your own) and fresh green beans (snip the ends, break in half and boil until just tender). Mom will love you for it!
