Any of a family of alloy steels usually containing 10–30% chromium. The presence of chromium, together with low carbon content, gives remarkable resistance to corrosion and heat.

The new model BMK-24 Bain Marie Kitchen grill is available for $2,695 (all prices suggested U.S. resale at participating resellers).

Bain-Marie (also called "water bath") cooking places baking dishes containing the food to be cooked in pans of heated water. This is a gentle cooking method that assures success with even difficult foods like custards. It also provides a convenient warm-up or keep-warm area for prepared foods, and can help revitalize some ingredients used in preparing foods for direct or indirect cooking on the grill.
