Ina's Sets (Fried) Chickens Free - Trans Fat-Free; Chicago Restaurant a Pioneer in Testing Trans Fat-Free Cooking Oil.


CHICAGO -- Today, the "Breakfast Queen of Chicago" announced that she intends to do her part to help the city live up to its promise of becoming trans fat-free.

Ina's, one of the most beloved restaurants in town, is among a number of leading restaurants around the country testing new cooking oils that dramatically reduce the level of "bad fats" (trans fats and saturated fats) in fried foods without compromising taste or kitchen performance.

Most of the heart-clogging trans fats in the U.S. diet come from the 5 billion pounds of partially hydrogenated cooking oils used annually to make french fries and other fried foods.

Two recently unveiled research studies -- one by the University of Lethbridge in Alberta, Canada, and one by Jeffrey Gross Market Research in San Francisco San Francisco (săn frănsĭs`kō), city (1990 pop. 723,959), coextensive with San Francisco co., W Calif., on the tip of a peninsula between the Pacific Ocean and San Francisco Bay, which are connected by the strait known as the Golden , Calif. -- confirm three important facts about the performance of these new oils:

--Consumer preference for foods fried in these new oils was equal to preference for foods fried in partially hydrogenated soybean oil Soy´bean oil   

n. 1. an oil obtained from the soybean (Glycine max), rich in protein, fats, sterols, and phospholipids, used as a food and in paints and varnishes and in various industrial applications; -
 (the industry standard that is notoriously high in trans fats) and higher than foods fried in low linolenic soybean oil (another trans fat-free alternative).

--Foods fried in these new oils had 65 percent fewer combined trans and saturated fats than foods fried in partially hydrogenated soybean oil.

--These highly stable oils performed very well in the demanding environment of the foodservice kitchen. In fact, they stayed functional up to 50 percent longer than other oils tested, which translates into economic benefits for foodservice operators.

"These oils give restaurants, for the first time, a way to eliminate trans fats and significantly reduce saturates without compromising taste and performance."
