Hot off the grill.


Betcha didn't know this summer marks the 100th anniversary of the hamburger. Yup! So pass up the fast food, and flip your own burgers! Grilling guru Elizabeth Karmel of girlsatthegrill.com gets GL all fired up with her top girl-friendly grilling secrets.

WHAT YOU NEED

* One 3-oz. combo of lean ground chuck and ground sirloin or 1/2 lb. tofu tofu

Soft, bland, custardlike food product made from soybeans. Believed to date from China's Han dynasty (206 BC–AD 220), tofu is today an important source of protein in the cuisines of East and Southeast Asia.
 steak per person

* olive oil olive oil, pale yellow to greenish oil obtained from the pulp of olives by separating the liquids from solids. Olive oil was used in the ancient world for lighting, in the preparation of food, and as an anointing oil for both ritual and cosmetic purposes.  

* kosher salt

* freshly ground pepper

* 2 sets of tongs tongs

long-handled, about 3 feet, shaped like pincers with knobs on the ends of the grasping blades. Applied by standing behind the subject in a confined space and closing the jaws to grasp the animal's head just below the ears.
 

* extra-long grilling mitt

Always preheat the grill (get an adult to help you with this!). Gas grills heat up in about 15 minutes. If you're using charcoal, you'll need to preheat the coals for about 25 minutes or until the coals turn a white/gray ash color.

PREP Gently shape ground beef into patties. Brush patties lightly with olive oil (this prevents them from sticking), and season them with the salt and pepper

To become marinated.
 in soy sauce first for 30 minutes. For a flat, fast-food style hamburger, stick your thumb in the middle of the patty to make a depression.

NOW YOU'RE GRILLIN' Place the burgers on the grill on high heat. (Remember to use separate tongs for raw and cooked burgers; food poisoning food poisoning, acute illness following the eating of foods contaminated by bacteria, bacterial toxins, natural poisons, or harmful chemical substances. It was once customary to classify all such illnesses as "ptomaine poisoning," but it was later discovered that  can ruin any picnic.) Keep the lid down while grilling. Turn the burgers only once, halfway through cooking (burgers are done in 10 to 12 minutes). To check, stick an instant-read meat thermometer into the patty sideways. It should read 165 degrees.
