Della Reese's Turkey Meatloaf
Serves 10

  2 pounds ground skinless dark and
    white turkey
1/2 medium onion, minced
    3 tablespoons minced fresh parsley
  1 egg
1/4 cup low-fat (1 percent) milk
  1 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon ground white pepper
1/8 teaspoon nutmeg
  2 slices white bread, lightly toasted
  2 tablespoons ketchup
  2 tablespoons water

Preheat oven to 350[degrees] F. In large bowl,
blend onion and parsley into ground
turkey; set aside.

In medium bowl, whisk egg until
frothy, about 1 minute. Add milk,
mustard, salt, pepper, and nutmeg;
whisk to blend. Add bread crumbs
and let stand for 5 minutes. Add egg
mixture to meat mixture and blend
well, about 1 minute. Spread evenly
into a 9" x 5" loaf pan. In small bowl,
combine ketchup and water until
blended. Spread on top of meat. Bake
until meat is no longer pink, about 90
minutes.

Sodium: 185 mg         Fat: 3 gm
Fiber: 0 gm

Diabetic exchange: 1/2 starch + 3 very lean
meat
