Hand-held electronic nose soon on the market.

Electronic noses are not new to the food industry, but the technology continues to evolve and improve. Later this year, Cyrano Sciences Inc. (73 N. Vinedo Ave., Pasadena, CA 91107) plans to commercialize electronic nose technology initially developed at the California Institute of Technology California Institute of Technology, at Pasadena, Calif.; originally for men, became coeducational in 1970; founded 1891 as Throop Polytechnic Institute; called Throop College of Technology, 1913–20. . Cyrano, a venture-backed company founded in 1997, is developing a hand-held device that will make it possible to test odors Odors

for a number of applications and rapidly classify families of unknown vapors. Potential food applications include quality control of packaging materials and ingredients, as well as control of some manufacturing processes.

The company also is developing a silicon-based NoseChip(tm) that will facilitate the detection of chemical vapors and odors, and find use in high-volume consumer applications and dangerous environments. The technology generally involves an array of sensors composed of different polymers filled with conductive conductive

having the quality of readily conducting electric current.

Depending on the final design, the device could cost in the $5000 range. The instrument will be battery powered and about the size of an early-model cell phone. A fixed in-line version of the technology also is under consideration. The company eventually intends to develop a NoseChip that might be used in disposable packaging to monitor freshness and indicate spoilage spoilage

Cyrano scientists tell us that the array of sensors makes possible minimal cycle time. The device can detect a variety of odors or aromas, function in many environments without special preparation or isolation conditions, and doesn't require an advanced sensor design or cleaning between uses. In some applications, sampling might just involve moving the device over an open product. Some foods might be placed in a bottle for headspace head·space
