DINING OUT The new Boe restaurant in the recently opened Crescent Hotel in Beverly Hills is described in its press notices as the ``heart'' of the hotel. Called an indoor-outdoor restaurant, Boe offers fare by executive chef Max Schlutz from a limited one-page menu of nine regular items that range from pommes allumettes (Belgian fries with herbs, raw garlic, Parmesan and white truffle oil) for $10 to a shrimp and crusty loaf platter for $18. There's a Cairo street food dish called dukkah ($13) made with ground nuts and spices and served with warm flatbread and olive oil. And there's bulgogi, ($13) the Korean creation of thinly sliced, marinated grilled beef, here accompanied by lettuce leaves, kimchee and Asian pears. An Italian Amalfi coast item titled piccolo piccolo, small transverse flute pitched an octave higher than the standard flute. Its tone is bright and shrill, and it can produce the highest notes in the orchestral range. The piccolo is used in orchestras and especially in military bands.
