PRESERVING BOOK

If you're contemplating preserving the season's brightest, best and most flavorful fruits and vegetables, you won't want to miss the ``Ball Complete Book of Home Preserving,'' edited by Judi Kingry and Lauren Devine (Robert Rose Inc.; $19.95). It's filled with more than 400 recipes designed to appeal to both beginner and sophisticated pro. Among the creations are jams, jellies, salsas, sauces, spreads, pickles pickle, general term for fruits or vegetables preserved in vinegar or brine, usually with spices or sugar or both. Vegetables commonly pickled include the beet, cabbage, cauliflower, cucumber, olive, onion, pepper, and tomato. Mixed pickles include piccalilli, chowchow, mustard pickles, and chutney. Dill pickles are cucumbers matured in a brine of dill leaves and seed heads. Sweet pickles are made from various fruits or vegetables—e.g., chutney, relishes and much more. The book includes an explanation of the food preservation food preservation, methods of preparing food so that it can be stored for future use. Because most foods remain edible for only a brief period of time, people since the earliest ages have experimented with methods for successful food preservation. Among the products of early food conservation were cheese and butter, raisins, pemmican, sausage, bacon, and grain. process along with instructions for canning safely, tips, equipment and utensil info, a glossary and trouble-shooting canning problems. Among other delicious sounding recipes are Balsamic Red Pepper Jelly, Brandied Apricot Preserves, Thai Hot and Sweet Dipping Sauce, Bruschetta in a Jar, Tamarind tamarind (tăm`ərĭnd), tropical ornamental evergreen tree (Tamarindus indica) of the family Leguminosae (pulse family), native to Africa and probably to Asia, but now widely grown in the tropics. The fruit, a brown pod from 3 to 8 in. (8–20 cm) long, has been an article of commerce since medieval times. Chutney, Orange Chili Marmalade, Chicken Wing Sauce, Danish Cherry Sauce and more.
