SINGAPORE pastry chef A pastry chef or pâtissier is a station chef in a professional kitchen, skilled in the making of pastries, desserts, and other baked goods. They are employed in large hotels, bistros, restaurants, and bakeries.  Kristy Choo makes these treats by hand in her Venice pastry shop. She just released five new flavors, including Fruit de Nepal, Carmel Clove and Pandan Pandan can refer to:
  • Pandanus amaryllifolius, a plant which yields the pandan leaf used widely in Southeast Asian cuisine
  • Pandan cake, a green dessert made with pandan
  • Pandan, Antique, a municipality in the Philippines
, an Asian aromatic herb. The Pandan chocolate is infused in butter and mixed with dark chocolate and ganache ga·nache

A rich icing made of chocolate and cream heated and stirred together, used also as a filling, as for cakes or pastry.

Choo grinds her own cloves, and hand-dips and hand-paints each piece of chocolate. One batch takes up to four days to create from start to finish, and the goal is to have each piece appear to have been crafted as a work of art. The flavor of the morsels is a bit eccentric, but they're not overly sweet.
