Here are three recipes perfect for spring entertaining:
Croissant Pinwheel Eggs Benedict

1 teaspoon vinegar
4 eggs
4 thin slices Canadian bacon
4 Croissant Pinwheels (baked fresh at 515 SAM'S CLUB locations
  nationwide)
3 egg yolks
1 tablespoon hot water
1 tablespoon lemon juice
1 stick unsalted butter, melted and hot
Salt and pepper to taste
Paprika
Chopped fresh parsley

Method

1. In a 10-inch skillet, heat 2 inches of water and the vinegar to
   boiling; reduce to simmering.
2. Break cold eggs, one at a time, into custard cup or saucer.
3. Holding dish close to water's surface, carefully slip eggs into
   water.
4. Cook 3 to 5 minutes or until whites and yolks are firm, not runny.
5. Remove eggs with slotted spoon and drain on paper towel.
6. In 10-inch nonstick skillet, heat Canadian bacon until warm.
7. Using a serrated bread knife, carefully split Croissant Pinwheels;
   brush cut sides with melted butter. In same nonstick skillet,
   toast cut sides of Pinwheels over medium-high heat until golden
   brown.
8. To make sauce, place egg yolks, hot water and lemon juice in
   blender. Cover and blend 1 minute. With blender running, pour hot
   melted butter through hole of blender cover. Season with salt and
   pepper; keep warm.
9. Top each toasted Pinwheel with 1 slice Canadian bacon and 1 poached
   egg. Pour warm sauce over each; top each with top half.  Garnish
   with paprika and chopped parsley. Serve immediately.

Croissant Pinwheel Cucumber Derbys

5 Croissant pinwheels (baked fresh at 515 SAM'S CLUB locations
  nationwide)
1 English cucumber
6 oz. of whipped cream cheese
1 jar (2 oz.) of pimentos, drained well
Salt and pepper to taste

1. Thinly slice the cucumber, place slices on paper towels to drain.
2. In a small bowl, stir together cream cheese, pimentos, salt and
   pepper.
3. Using a serrated bread knife, carefully split Croissant Pinwheels.
4. Spread cream cheese mixture on cut sides of each Pinwheel.
5. Layer cut cucumbers in pinwheel arrangement on bottom half of each
   Pinwheel.
6. Season lightly with additional salt and pepper. Top each with top
   half.

Croissant Pinwheel Omelet Canape

Delicious Made with Plain, Garlic Parmesan, Sesame Seed or Everything-
Topped Croissant Pinwheels!

Yield: 6 canapes

Ingredients

6 Croissant Pinwheels (baked fresh at 515 SAM'S CLUB locations
  nationwide)
3 tablespoons butter
6 eggs
Salt and pepper to taste
12 slices thick-sliced bacon, cooked
6 slices Swiss cheese

Method

1. Heat oven to 300 degrees F.
2. Using a serrated bread knife, carefully split Croissant Pinwheels.
   Melt 2 tablespoons of butter; brush cut sides with melted butter.
3. On a nonstick griddle or skillet, toast cut sides of Pinwheels over
   medium-high heat until golden brown.
4. Heat 10-inch nonstick skillet or omelet pan over low heat. Add
   remaining 1 tablespoon butter. While butter is melting, break eggs
   into large bowl; beat thoroughly. Season with salt and pepper.
5. Increase heat to medium; tilt pan to coat bottom with butter.
   Quickly add egg mixture. While rapidly sliding pan back and forth
   over heat, quickly stir with spatula to spread eggs continuously
   over bottom of pan as they thicken. Let stand over heat a few
   seconds to lightly brown bottom of omelet. Do not overcook.
6. Run spatula around edge of omelet. Slip omelet onto cutting board
   and cut into 6 wedges.
7. Top bottom half of each toasted Pinwheel with 1 wedge of the
   omelet, 2 slices bacon and 1 slice cheese. Place on ungreased
   cookie sheet.
8. Bake 4 to 5 minutes or until cheese just begins to melt. Top each
   with top half of Croissant Pinwheel. Serve immediately.
