Extra thyme thyme (tīm), any species of the genus Thymus, aromatic herbs or shrubby plants of the family Labiatae (mint family). The common thyme, which is used as a seasoning herb and yields a medicinal essential oil containing thymol, is the Old World  herby meat patties

(Serves 4)

Preparation time: 5 minutes

Cooking time: Approximately 6-8 minutes on each side

450g/1lb Quality Standard beef mince

1 small red onion, peeled and finely chopped chop 1  
v. chopped, chop·ping, chops

a. To cut by striking with a heavy sharp tool, such as an ax: chop wood.

10ml/2tsp fresh thyme leaves

30ml/2tbsp wholegrain mustard mustard, common name for the Cruciferae, a large family chiefly of herbs of north temperate regions. The easily distinguished flowers of the Cruciferae have four petals arranged diagonally ("cruciform") and alternating with the four sepals.  

Salt and pepper

Flour, for dusting

1: In a large bowl mix together all the ingredients except the flour.

2: Lightly dust your hands in a little flour and shape into twelve 5cm (2inch) patties.

3: Cook on a preheated grill or barbecue for 6-8 minutes on each side turning occasionally until cooked.

4: Serve the patties in warmed naan or pitta bread, with a home-made or prepared summer tomato relish.
