FRIED GREEN TOMATOES

1 large green tomato

3 eggs, beaten

1 cup cornmeal

3 ounces jumbo lump crabmeat

1/2 teaspoon shallots

1/2 tablespoon minced garlic

1 tablespoon buffer

2 tablespoons white wine

1/3 cup heavy whipping cream

Salt and pepper to taste

2 ounces Alabama goat cheese

1 small Roma tomato, diced

1 cup mixed greens

2 tablespoons Julep's pepper-jelly vinaigrette


Slice tomato into six thin slices. Dip in egg wash and cornmeal corn·meal also corn meal

RASPBERRY CREME BRULEE

1 quart heavy cream

9 egg yolks

1 1/2 cups sugar

1 1/2 ounces raspberry liqueur

1/8 teaspoon almond extract

1 pint raspberries


Slowly heat cream until it scalds. Combine sugar, egg yolks, raspberry liqueur, and almond extract, then mix thoroughly. Slowly pour cream into the egg mixture and continue mixing. Fill an 8-ounce soup cup with custard, then place 6-8 raspberries in each cup. Place cups of custard in a baking pan, and put enough hot water to partially submerge sub·merge

Bake in a preheated 350-degree oven for about 45 minutes or until the custard is cooked enough so that you can place a knife in and remove without mixture sticking to blade. ENCHILADAS

SAUCE:

1 teaspoon salt

1 teaspoon garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1/2 cup flour

Water

Tomato puree


Mix dry ingredients together, and add water until sauce reaches correct thickness. Bring mixture to boil. Add tomato puree to taste. Cook and stir for 10 minutes. Taste to see if sauce needs more seasoning. If so, add more salt, garlic, cumin, and chili powder.
