I would really like the recipe for the squash casserole from the new restaurant in Vicksburg called the Bistro Under the Stairs on the corner of Washington Street The following streets in the United States are called Washington Street:
  • Washington Street (Alexandria), in Alexandria, Virginia
  • Washington Street (Baltimore), in Baltimore, Maryland, running near Johns Hopkins Hospital
 and Grove. It is absolutely delicious--nothing like you have ever tasted. I am sure everyone would agree.

Vicksburg
SQUASH CASSEROLE

2 yellow squash
2 zucchini squash
1/4 cup butter or margarine
1/2 onion, sliced
2 fresh cloves garlic, minced
Salt and pepper to taste

Slice squash and zucchini into 1/8-inch slices. Set aside. Melt
butter in a fairly large skillet, and add onions and garlic. Cook
until onions are almost translucent. Add squash and zucchini.
Continue to cook until squash is soft. Add salt and pepper. You
may want to add a little more butter if they brown too fast.

Note: If you use real butter, be sure to add olive oil to the skillet
while heating. Butter will cook much faster than margarine and
therefore burn.


The Bistro Under the Stairs, located in Vicksburg's downtown historic district, is open from 8 a.m.-2:30 p.m. Tuesday through Saturday for breakfast and lunch and features an onsite bakery and gift shop. Chef/owner Charlene Miles reports that garlic cheese grits grits

coarsely ground hominy served in traditional Southern breakfast. [Am. Culture: Misc.]

 with shrimp tops the list of breakfast favorites. For lunch, patrons crave cranberry, orange, and turkey sandwiches; low-curb lettuce wraps; hamburgers; and a citrus salad composed of orange and strawberry slices on a bed of greens tossed with citrus-vinaigrette house dressing.

The restaurant is available for private parties after hours Adv. 1. after hours - not during regular hours; "he often worked after hours"  and for children's birthday parties, supervised by Miles. Options include a tea party, a cake and candy-making lesson, and a food art and sculpture class where the children finger-paint with jello and decorate vegetables and fruit.

During the holidays (November 1-January 2), Charlene plans to lengthen the Bistro's hours to 6 p.m. She will have ready-made casseroles for take-out as well as homemade fudge and Martha Washington Creams. Holiday dinner trays including turkey or ham, dressing, two sides, bread, and dessert may be ordered.

I had the most delicious tomato-basil soup recently at Bravo in Highland Village in Jackson. Do you think they would share the recipe with the readers of "Dish It Out?"

TOMATO-BASIL SOUP

5 cans chopped tomatoes in juice
1/2 cup red wine
1/2 cup balsamic vinegar
2 1/2 cups water
Pinch nutmeg
1/3 cup sugar
1 tablespoon garlic, minced
2 tablespoons flour
2 tablespoons olive oil
3/4 cup heavy cream
1/3 cup basil pesto
Salt and pepper to taste

In a stockpot, simmer tomatoes, red wine, balsamic vinegar,
water, nutmeg, sugar, and garlic for 30 minutes over medium
heat. Puree soup with a hand blender or in a blender or food
processor. Put soup back on the heat, and start to bring it to a boil.
In a separate pan, whisk together flour and oil over medium-low
heat to make a light roux. Whisk roux into the near-boiling soup.
Stir in cream and pesto. Continue to stir frequently so as not to
scorch. As soon as soup comes back to a boil, turn it back down
to a simmer, and adjust seasonings by adding salt and pepper.
Simmer until soup is the desired thickness, stirring occasionally.
Skim any foam off the top as necessary. Yield: 12 servings.

SWENSEN'S CHICKEN
NOODLE SOUP

1 2/3 gallons water
11/2 (2.25-ounce) jars chicken-flavored
   bouillon (granulated)
1 1/2 teaspoons Lawry's Seasoned Salt
1 teaspoon garlic salt
1 teaspoon garlic powder
1 teaspoon black pepper
1 (12-ounce) bag extra-broad egg noodles
2 cans Campbell's Cream of Chicken Soup
1 tablespoon butter
1/4b bunch green onions (3 1/2 onions total),
   finely chopped
1 pint cooked white chicken breasts,
   shredded

Bring water to boil. Add bouillon and
all seasonings. Add noodles, and cook
until tender. Add cream of chicken soup.
Saute green onions in butter in a
saucepan. Add to mixture. Add cooked
chicken, then stir well, and serve
Yield: 2 gallons (approximately
20 servings).
