SHRIMP AND TABASCO HOT SAUCE CHEESE GRITS

GRITS:


1 cup Quaker Quick Grits
4 tablespoons unsalted butter
3/4 cup extra sharp cheddar (white)
1/2 cup grated Parmesan cheese
1 teaspoon cayenne pepper
1 1/2 tablespoons paprika
I tablespoon Tabasco Hot Sauce
salt and pepper to taste


Cook grits according to according to
prep.

SHRIMP:


2 cups chopped smoked bacon
3 tablespoons olive oil
1 1/2 pounds 26-30 Ct. shrimp
salt and black pepper
8 teaspoons minced garlic
3 cups sliced white mushrooms
3 tablespoons white wine
2 tablespoons lemon juice
2 cups sliced scallions


Cook bacon until it begins to brown. Remove from heat, strain, and reserve bacon grease Bacon grease, also known as the drippings, is the grease created as the by product of cooking bacon. When bacon is cooked the heat causes the fats naturally on it to melt becoming highly flavorful grease.  and bacon bits Bacon bits are condiments frequently used to enhance the flavor of salad or potatoes. They are a common element of salad bars. Bacon bits are made of either small, crumbled pieces of cooked bacon or, more frequently, textured vegetable protein artificially flavored to resemble .

Heat large skillet until very hot. Add olive oil olive oil, pale yellow to greenish oil obtained from the pulp of olives by separating the liquids from solids. Olive oil was used in the ancient world for lighting, in the preparation of food, and as an anointing oil for both ritual and cosmetic purposes.  and 2 tablespoons bacon fat. As oil begins to smoke, toss in shrimp to cover bottom of pan. Before stirring, season with salt and pepper (this will season shrimp in particular, but the rest of the dish as well).

Stir until shrimp begin to turn pink all over (let pan return to original hot temperature). Stir in minced garlic and bacon bits (be careful not to burn the garlic). Toss in mushrooms and coat with oil briefly.

Add lemon juice and wine. Stir for 30 seconds or until everything is well coated and incorporated. Assuming the dish is ready to be served, toss in sliced scallions and stir for about 20 seconds. (If these hold too long before serving, they will begin to turn brown and lose all of their crunch.)

Serve over the patiently waiting cheese grits. This should serve 3 or 4 depending on how hungry everyone is.

. Located on the square in Oxford, City Grocery is a mecca for food lovers who have trouble choosing between regional dishes and more eclectic cuisine. Open for lunch, Monday through Saturday, at 11:30 a.m. until 2:30p.m. Dinner is served from 6 until 10 p.m. Monday through Wednesday, and from 6 until 10:30 p.m. Thursday through Saturday.

I lived in Jackson from 1973 to 1990 and my favorite My Favorite is an independent synthpop band from Long Island, New York. They released two CDs: Love at Absolute Zero and Happiest Days of Our Lives. My Favorite broke up on September 14, 2005, when singer Andrea Vaughn left the band.  meal over the years was the Chicken Supreme from Primos. CHICKEN SUPREME


8 tablespoons butter
1/2 cup shallots, chopped fine
1/2 red bell pepper
3 tablespoons flour
3 1/2 cups chopped mushrooms
1/4 cup Worcestershire
4 cups chicken stock
salt and pepper to taste
1/2 cup dry sherry
1 quart cream
2 tablespoons Tabasco
3 (5-ounce) skinless boneless
  chicken breasts, tenderized


Melt butter. Add shallots and bell pepper. Sweat down until translucent. Stir flour in and cook 3 to 4 minutes. Add mushrooms, Worcestershire, chicken stock, and salt and pepper. Cook approximately 3 to 4 minutes. Add sherry and bring to a boil. Add cream and Tabasco and bring back to a boil. Simmer 45 minutes to 1 hour. Fry chicken breasts until done. Serve over rice of your choice.

Primos Restaurants have been Jackson institutions since 1929. Originally started by Angelo "Pop" Primos as a bakery, the enterprise grew into three full-service restaurants which flourished for years but eventually closed. Primos Northgate, a complex of restaurants and private dining rooms owned and managed by Don Primos, was sold in 2001.

I recently ordered Catfish catfish, common name applied to members of the freshwater fish families constituting the suborder Nematognathi. The catfish is related to the sucker and the minnow, and like them has a complex set of bones forming a sensitive hearing apparatus.  Allison at Davidson's Corner Market in Canton. CATFISH ALLISON


6-8 catfish fillets
1 cup grated Parmesan cheese (fresh
  is better)
1/2 cup buter, softened
1/2 cup mayonnaise
6 green onions, finely chopped
1 teaspoon Worcestershire Sause
  dash Tabasco
salt and gralic pepper, to taste


Mix everything except catfish fillets. Sprinkle the backside of the fillets with garlic pepper and the front side with salt. Place fillets on baking pan and spoon sauce evenly over the fillets. Bake at 350 degrees for approximately 40-45 minutes or until the fillets reach 135 degrees. Carefully remove and place on your dinner plates.

Davidson's Corner Market is located on the Northeast corner of the historic square in Canton. It is popular with tourists and locals alike and has a gift shop. It is open Monday through Saturday for lunch and Thursday through Saturday for dinner featuring live entertainment on Friday and Saturday evenings.
