Mary Frances Rogers Mendenhall Many say the best restaurants are those that only the locals know about and one such restaurant is located in Mount Olive--three miles off the beaten path on Linda Bennett's (a.k.a. Matilda) family land. Matilda's restaurant pays homage to Bennett's family and the land on which it is built. The walls are covered with photos and other memorabilia of the O'Neal clan who settled there in the early 1800s. A six-year-old Matilda even graces the cover of the restaurant's menu. Bennett has been pleasing hungry customers with her delicious creations for five years. Locals (and others "in the know") converge on this out-of-the-way location every weekend for meals that please the palette and senses. Patrons only have to decide between staples such as Black Angus steak, grilled fish, and fried dill dill, Old World annual or biennial plant (Anethum graveolens) of the family Umbelliferae (parsley family), cultivated since at least since 400 B.C. POTATO CASSEROLE This delicious dish may be served hot or cold 6-8 medium-size baking potatoes, diced (peeling on) 1 package dry Ranch dressing mix 1/4 cup heavy whipping cream 3 green onions, finely chopped 1/4 cup buttermilk 6 slices bacon, fried crisp and finely chopped or 1/4 cup real bacon bits 1/4 cup sour cream 3/4 cup mayonnaise 1/2 cup shredded cheese (if serving hot) 1/4 parsley, finely chopped (if serving cold) Boil potatoes until tender; do not overcook. Add salt to taste, drain well, and set aside to cool. In a medium-size mixing bowl, combine Ranch dressing mix, whipping cream, green onions, buttermilk, bacon, and sour cream. Add mayonnaise to obtain consistency of potato salad. To serve hot, place in a baking dish, top with shredded cheese and more bacon. Bake at 350 degrees until bubbling hot. To serve cold, garnish with parsley.
