Columbus CREAMY CHICKEN NOODLE SOUP 1 pound margarine 4 cups yellow onion, diced 4 cups celery, diced 4 cups carrots, diced 3 cups flour 1 gallon hot water 1 cup chicken base 4 quarts half-and-half 2 quarts heavy cream 4 pounds chicken tenders 3 pounds egg noodles, cooked and drained 2 tablespoons kosher salt 1 tablespoon cayenne pepper 1 tablespoon ground white pepper Melt margarine in a large pan, and add vegetables; simmer until vegetables are soft. Add flour all at once. Mix well, making sure there are no lumps. Dissolve chicken base in the hot water, and add to the pan with vegetables, stirring constantly to dissolve any lumps. Add half-and-half and heavy cream, and mix very thoroughly. Bring to a simmer. While soup is coming to a simmer, place chicken tenders in a large saucepan with enough water to cover completely. Bring to a boil, and cook until done. Drain water, and place tenders in the refrigerator until cool enough to handle. Cut tenders into 1/2-inch cubes. You can also cook and drain noodles at this time. When soup comes to a boil, lower heat, and simmer gently for 10 minutes.
