Del Monte(R) Gingered Pear Chicken Dijon
4 servings
1 can (15.25 oz.) DEL MONTE(R) Lite Sliced Pears
4 medium skinless, boneless chicken breasts
1 Tbsp. olive oil
4 green onions, thinly sliced
2 Tbsp. molasses
1/2 tsp. ground ginger
1 Tbsp. Dijon mustard
Additional sliced green onions for garnish
Directions:
1. Drain pears, reserving syrup; set aside. Season chicken with
salt and pepper, if desired.
2. Heat oil in large nonstick skillet over medium-high heat. Add
chicken and cook 9 - 10 minutes, turning once, until no longer
pink in the center. (Should reach 160 degrees F on instant read
thermometer) Remove to a platter.
3. Add reserved pear liquid, sliced green onions, molasses, ginger
and mustard to skillet and bring to a boil, scraping up browned
bits from pan. Reduce heat, cook 2 minutes. Stir in pears and
heat through.
4. Spoon sauce and pears over chicken. Garnish with green onions,
if desired.
