DINING BEAT : WAITER MAKES CAREER OF IT.

Taix waiter Bernard Inchauspe, one of the nominees for Service Person of the Year by the California Restaurant Writers Association (CRWA CRWA Charles River Watershed Association (Massachusetts)

), is one of the few waiters in this town who feels he has already landed his big career break.

``I am a professional waiter. I am fulfilled with what I do,'' he says.

A French Basque born in the Pyrenees in Southern France Southern France (or the South of France), colloquially known as Le Midi, is a loosely defined geographical area consisting of the regions of France that border the Atlantic Ocean south of the Gironde, Spain, the Mediterranean Sea, Italy, and Switzerland south of the , Inchauspe left the rural life for Lourdes, and later Paris, to be a waiter.

Happy Hour (5 to 7 p.m. weekdays) is no buffet grabfest at Monty's Steak House, 5371 Topanga Canyon Blvd., Woodland Hills.
