Next stop for Jean-Louis De Mori and chef Antonio Tommasi will probably be Agoura.

The two entrepreneurial forces behind Locanda Veneta, Ca' del Sole, Ca'Brea, Il Moro and Allegria are negotiating to take over the shuttered former California Fettuccine Bar, at 29008 Agoura Road, Agoura, and turn it into one of their vital Venetian restaurants.

``We like the free-standing building,'' said Jean-Louis De Mori.

As for the name, De Mori said that they're not sure at this point, but are considering I Padri, which means ``the father'' in Italian.

Time for Roll & Roll

Replacing Rosati's Ristorante at 17547 Ventura Blvd. in Encino is the Roll & Roll Cafe, where pastas are only $3.95.

According to owner Harry Naghieh, the month-old Roll & Roll opens for breakfast at 8 a.m. and serves snacks and meals until midnight.

In addition to the low-cost pastas, the menu features sub sandwiches, hamburgers, pizzas and salads.

Subs invade Valley

Not far away from Roll & Roll, Quizno's, a toasted sub sandwich chain of 335 units in 35 states, will soon open in the former Bukhara space at 16260 Ventura Blvd., Encino.

Hot stuff

Fans of the 70-year-old El Cholo will soon be able to cook most of its Cal-Mex dishes - including its famous green corn tamales - at home, but will not be able to make its famous margaritas.

That's because in the upcoming ``El Cholo Cookbook: Recipes and Lore From California's Best-Loved Mexican Kitchen,'' by local restaurant critic and author Merrill Shindler (Angel City Press; $18.95), due out May 5, the green corn tamales recipe can be found on page 53.

But El Cholo has refused to give away its secret margarita recipe. Instead, there's one by the author called ``the world's second-best margarita.''
