DINING BEAT : SUITING THE CUSTOMER.

Successful restaurants are often those that ``tailor'' food and service to segments of their potential market.

There are many that serve early-bird dinners and many that offer one form or another of prix-fixe meals.

But both JoeJoe's in Sherman Oaks and 2087 - An American Bistro in Thousand Oaks Thousand Oaks, residential city (1990 pop. 104,352), Ventura co., S Calif., in a farm area; inc. 1964. Avocados, citrus, vegetables, strawberries, and nursery products are grown.  have tailored their early dinner menus to suit their own particular circumstances.

In the case of JoeJoe's, chef Thomas Munoz has developed a three-course mini-fixe of light dishes that he serves between 5 and 6:30 p.m. priced at $15. These, of course, fit fixed-income, retired seniors who would normally have to pay almost twice as much for a regular three-course meal here.

Yet, even by featuring dishes like the signature potato-scaled whitefish whitefish: see salmon.

The part of the fungus used as food is the ascoma, the fruiting body of the fungus.  cake with vanilla sauce or apple tarte tatin, these well-rounded but reduced-size dinners are specifically tailored for people with smaller appetites.

The current mini-fixe menu begins with a choice of salad, soup or chicken ravioli, then has chicken and roast pork plates as entree options in addition to the the whitefish and lamb and a third dessert choice, strawberry granite.

At 2087, the kitchen, now under the direction of Steve Caman and Richard De Mane, began serving a pre-theater, three-course, prix-fixe dinner from 5 to 7 p.m. in mid-October.

The fixed price for the meal is appropriately $20.87. But the ``tailoring'' twist is that those attending the theater across the street at the Civic Arts Plaza may park their car at 2087, eat a starter and entree course, walk to the Plaza and return after the show to leisurely enjoy their dessert.
