DINING BEAT : IT'S A WRAP ON MELROSE.

Are you ready for the ultimate wrap?

Yujean Kang's, 8826 Melrose Ave. in West Hollywood, has added Beijing menu items including Peking Peking: see Beijing, China. (or Beijing) duck in Bao Bing crepes crepe (krāp), thin fabric of crinkled texture, woven originally in silk but now available in all major fibers. There are two kinds of crepe. The hard-finished, typically dyed black and used for mourning (which tends to retain the old spelling crape, as a single course ($30) or as a double course ($35) with duck soup.

More in line with chef-owner Kang's version of China's capital cuisine for the common man are wraps with bell pepper beef ($12), with lamb loin loin (loin) the part of the back between the thorax and pelvis.

 plus ginger and chili sauce ($14), with mu shu vegetables ($10), with mu shu pork ($12), with chicken breast and tomato ($12), with prawns prawn: see shrimp. and pickled cabbage plus blackened chiles ($14), and with pork loin and scallions scallion: see onion. with sweet bean sauce ($12).

Chef-broadcaster Piero Biondi will be personally doing the cooking every Wednesday and Thursday in the kitchen of his Piero's Seafood House, 2825 Olive Ave., Burbank, now more a trattoria than a fish eatery. Chef Piero has had his own radio show on KIEV-AM (870) for many years, produces his own flavoring products and makes many personal appearances around the nation.
