DINING BEAT : FISH, PASTA RIDE THE WAVE.

Giuseppe Bellisario, who plans to open the Wave Bar & Grill on the ex-Trilussa site at 16925 Ventura Blvd., Encino, before the end of this month, promises inexpensive pasta plates and plenty of moderately priced fresh fish dinners.

A new Signature

Things have changed somewhat at the comparatively new Signature Grill, 14755 Ventura Blvd., Sherman Oaks.

There's a new chef, Eli Tordjman, French-trained and recently from a Denver hotel and the Cafe Noir in San Pedro.

His specialties include a tempura-battered, seaweed-wrapped salmon with eggplant, a filet mignon with three cheeses and a grape sauce, and a Greek-accented pasta of spaghetti with lamb, feta fet·a  
n.
A white semisoft cheese usually made of goat's or ewe's milk and often preserved in brine.
