DINING BEAT : CHEF OR CHIEF?

The announcement that John Sedlar - to all appearances both chef and owner of Abiquiu - had departed the Santa Monica Santa Monica (săn`tə mŏn`ĭkə), city (1990 pop. 86,905), Los Angeles co., S Calif., on Santa Monica Bay; inc. 1886. Tourism and retailing are important, and the city has motion-picture, biotechnology, and software industries.  restaurant (and was being described as merely its ``consultant chef,'' no less) makes you wonder how many chefs actually own restaurants.

Southwestern cuisine innovator Sedlar says his status quietly changed at Abiquiu as a result of earthquake-caused financial trauma. Now he's associated with Fusion at PDC (1) (Primary Domain Controller) A Windows NT/2000 service that manages security for its local domain. Every domain has one PDC, which contains a database of usernames, passwords and permissions. .

Richard Harader is Abiquiu owner, and Peter DeLucca is executive chef.

Similar surprises occurred when Claude Segal left the Four Oaks a few years ago and when Hans Rockenwagner more recently left Rox.

Obviously, many restaurant arrangements with celebrity chefs are no different from a business that hires a chief executive officer and can unload him if expectations aren't met.

A statement released by the restaurant gave ``creative differences'' as the reason for Sedlar's departure.

Fins to expand

Slated to open May 1 at 23504 Calabasas Road, Calabasas, is a second location of Fins Seafood Grill in Westlake Village.

Fins Creekside will have a similar seafood, steaks and pastas menu, said owner Moaz Megji.

It also will present piano entertainment most weeknights, jazz on Fridays and Saturdays, and blues with Sunday brunches, said Megji. There will be a smoking lounge upstairs.
