DINING BEAT\No end to Chronicle.

For sad devotees of Pasadena's landmark Chronicle - sold to Joachim Splichal of Patina and Pinot and due to close at the end of the month - the word is, don't despair. There's light at the end of the tunnel.

A new restaurant called Spencer's, replacing Les Arts at 70 S. Raymond Ave. in Pasadena, plans to debut Feb. 12 with a large contingent of personnel from the Chronicle, including its chef of 23 years, Domenick Medina, and his accomplished assistant chef and son, Domenick Jr.

    Spencer, named general manager and maitre d' of the new continental restaurant by purchaser Ron Eisler, said he'll carry on the strong wine commitment of the Chronicle.

    A menu highlighting many of the most popular dishes off the Chronicle's menu has been devised by Medina, who said the popular chateaubriand bouquetiere for two ($35) would be retained and would be the highest-priced entree.

    Some of the Chronicle's veal and pasta dishes will also be held over, including the favored seafood ravioli.

    Another, said Medina, will be the crab meat and julienned vegetable crepe crepe (krāp), thin fabric of crinkled texture, woven originally in silk but now available in all major fibers. There are two kinds of crepe.  with dill sauce and an 18-ounce porterhouse steak. Medina said there also would be some new items, one being a salmon and crab cakes dish.

    Medina figured the entree price range at dinnertime at Spencer's would run from $10 to $17.50.
