DINE BEAT : RESTAURANT NOTES HE HAS ONE FOR THE PALATE.

Serge Burckel, the talented chef who created such wondrous plates at a Redondo Beach hotel restaurant called Splash that he had at least half of the local foodie world at his feet for a couple of years, has opened his own restaurant.

He calls it One, and it officially begins serving to the public Thursday following a few days of semi-private trial evenings.

Located on the former Gadsby's site at 672 S. La Brea Ave., the intimate 48-seat restaurant serves dinner only, and is closed Sundays.

The menu is smaller but similar to his Splash bill of fare, Burckel said.

A 27-label, single page, starting wine list offers bottlings from $24 (nine choices) to $110. Seven wines by the glass are $6 and $7 each.

Weekday lunch service will start in late April, the chef-owner promised.

Chadney's Cousins

After a brief stay at 3575 Cahuenga Blvd. W. in Universal City following its relocation from its landmark site across from NBC NBC

 in Burbank, Chadney's Universal is turning over its food operation to the ownership and kitchen staff of the former Country Cousins Cafe.

Country Cousins, previously at 4724 Lankershim Blvd., North Hollywood, and shuttered for two years, took over the cooking concession in this much larger facility Thursday, according to co-owner Amira Brooks.

During its hiatus as a public restaurant, Country Cousins was operative but doing strictly private catering, said Brooks.

Now, with Chadney's full bar and entertainment, it will have the same chef, Ken Roberts, along with Cousins' co-owner Deedee Morris-Smith. The restaurant gradually is moving toward its original menu, emphasizing Cajun, Creole and Southern fare, said Brooks, while continuing to cater private parties, many of them from the nearby studios.

Currently, the menu in force lists the majority of the longtime familiar Chadney dishes with such additions as fried snapper snapper, name for members of the Lutianidae, a family of spiny-finned food and game fishes found chiefly in tropical coastal waters. Snappers are carnivorous, active, and voracious, with large mouths and sharp teeth.
