DINE BEAT : RESTAURANT NOTES FINS' LOSS ... UBON'S GAIN.

Bringing fish to the sea doesn't always work out. Fins, the popular Westlake Village and Calabasas seafood restaurants, tried a third branch in Malibu. It was on the Bambu site 3835 Cross Creek Road, but Fins will retreat back inland and concentrate on the year-round crowd and its more accessible facilities.

The Malibu location will become a second Ubon, that's Nobu spelled backward, the downscale To resize lower or convert down. A change at Paul's Cafe

Paul Lloyd, co-owner of Paul's Cafe, 13456 Ventura Blvd., Sherman Oaks, has confirmed that chef Darin Eckermann, his full partner, has sold Lloyd his share of the restaurant and is turning over his kitchen to sous chef Adrian Jones.

Jones, also an alumnus of Joe's in Venice and JoeJoe's in Sherman Oaks, is fully familiar with Paul's current menu, and there will be no apparent changes due to Eckermann's departure, promised Lloyd. Information and reservations: (818) 789-3575.
