Crispy Shredded Beef.


Ingredients: 350g beef steak; 2 eggs; 1/4 tsp salt; five tbsp plain flour plain flour

Method: Cut the beef steak across the grain into thin strips, then beat the two eggs in a bowl with the salt and flour.

Once the batter is ready, add beef strips and mix them well until they are coated. You now heat the oil in a large wok until smoking. Add beef and deep fry for five minutes, before removing it and draining it on absorbent absorbent /ab·sor·bent/ (-sor´bent)

Add the carrots to your wok and deep fry for about 1 1/2 minutes. Remove and drain.

Add the spring onions, garlic and chillies to stir-fry in wok for one minute. Add the sugar, rice vinegar, light soy sauce and water to the wok, blend well and bring to the boil. Stir in corn flour paste and simmer so the sauce thickens. Return beef to wok and stir-fry until meat is coated with the sauce..
