Crispy Frogs' Legs with Cambodian Mint Butter.


For the tomato jam, in a medium saucepan, heat the oil over medium heat. Add the garlic and onion and saute sau·té

For the tomato jam:

2 tablespoons extra virgin olive oil olive oil, pale yellow to greenish oil obtained from the pulp of olives by separating the liquids from solids. Olive oil was used in the ancient world for lighting, in the preparation of food, and as an anointing oil for both ritual and cosmetic purposes.  

3 tablespoons peeled and minced garlic

6 ounces unsalted butter

3 tablespoons capers

2 ounces fresh lemon juice

1/3 cup stemmed and chopped Cambodian mint [*]

Salt and pepper to taste

For the frogs' legs:

6 cups panko breadcrumbs

1/2 cup chopped Cambodian mint

6 eggs, beaten

48 frog legs, thigh bones and feet removed

1 cup extra virgin olive oil

Salt and pepper to taste

For the garnish:

Cambodian mint sprigs
