A[micro] Scallop Seviche with Green Apple and Radish
A[micro] Serves 4
A[micro] 1 Tbl Apple juice 3 oz Radishes diced small
A[micro] 1 Tbl Grapefruit juice 12 oz Bay scallops
A[micro] 2 Tbl Lemon juice 1 tsp Chopped basil
Salt and white pepper
1/4 cup Grapeseed or any to taste
neutral oil
2 Tbl Hazelnut oil
4 oz Granny smith apples diced
small
Combine all the ingredients together and finish seasoning with salt
and pepper. Leave in refrigerator, covered for 1 hour. Serve with
toasted bread.
