Legend has it that the potato chip was created because of a spat between millionaire industrialist Cornelius Vanderbilt and a restaurant chef in the resort town of Saratoga Springs Saratoga Springs, resort and residential city (1990 pop. 25,001), Saratoga co., E N.Y.; inc. as a village 1826, as a city 1915. Skidmore College is the largest source of employment, but the city also has light manufacturing. , N.Y., in 1853.

As the story goes, Vanderbilt chose fried potatoes with his dinner at Moon's Lake House Restaurant, then sent them back to the kitchen because they were too thick for his taste. Affronted, the chef sliced some potatoes paper thin, fried them and sent them back, expecting to annoy Vanderbilt. Instead, he proclaimed them delicious, and a new snack was born.

Granny Goose Foods Inc. began making potato chips in 1946 at the Oakland plant, starting out with seven delivery routes; it has been operating continuously for the past 50 years. Today, the company produces and distributes more than 250 different products ranging from potato, corn, rice and pretzel snacks to candies, cookies and nuts.

Now prominent in the Northern California market, Granny Goose Foods returned to the Southern California area this spring and expects a 20 percent increase in sales there. Granny Goose Foods employs more than 500 people, with annual sales in 1996 expected to be in the $60 million range.
