A summery alternative to Pimms, using amaretto am·a·ret·to

An Italian liqueur flavored with almond.



[Italian, diminutive of amaro, bitter, from Latin am
 flavoured Disaronno and Earl Grey tea Earl Grey tea is a tea blend with a distinctive flavour and aroma derived from the addition of oil extracted from the rind of the bergamot orange, a fragrant citrus fruit. .

INGREDIENTS: 100ml Disaronno Amaretto; 2 whole peaches, peeled and de-stoned; 1 tablespoon caster sugar caster sugar

; 1 lemon; 300ml strongly brewed Earl Grey tea.

METHOD: Put peaches in a jug with the sugar. Brew up 300 ml of Earl Grey Tea (use 300mls of water and 6 tea bags and brew for about a minute).

Allow to cool a little so that it is not boiling but still hot.

Pour the tea over the sugar and the peaches and, using a fork, pure the peaches in the sugar and tea.

Add the Disaronno and some ice and stir until cold.

Keep refrigerated between preparation and serving.

Just before serving, add the juice of half the lemon, chopping the remaining half into slices for garnish. Serve with a few small glasses.
