Noun

SERVES 6

3 egg yolks

3 tsp white wine vinegar Noun 1. wine vinegar - vinegar made from wine
vinegar, acetum - sour-tasting liquid produced usually by oxidation of the alcohol in wine or cider and used as a condiment or food preservative
 

1tsp English mustard

1/2tsp salt

375ml vegetable oil or olive oil olive oil, pale yellow to greenish oil obtained from the pulp of olives by separating the liquids from solids. Olive oil was used in the ancient world for lighting, in the preparation of food, and as an anointing oil for both ritual and cosmetic purposes.  

2tbsp Heinz Tomato ketchup

1 tbsp malt whisky

1/2tsp Tabasco sauce

1/2tsp Lea & Perrins

350g peeled prawns

140g shredded cos lettuce

1 lemon

I have been head chef and owner of Glasgow's top seafood restaurant, Gamba, since it opened in 1998.

I love fish and wish more people would learn to love it too.

However, in my new column for the magazine I'll be providing easyto-cook dishes that anyone can do at home - and I promise they won't all be for fish!

Everyone loves a prawn cocktail so I thought I'd start off by making a special version with real mayonnaise. Mayonnaise is something that a lot of people are scared to try at home.

Actually, it couldn't be easier - you just need to follow a few simple rules.

Make sure all your ingredients for mayonnaise are at room temperature. Olive oil will give a much stronger taste so you might want to start off using vegetable oil or even half and half.

Take a bowl and whisk the vinegar, egg yolks and salt together. Keep on whisking and add the oil, drop by drop at first, until the mixture starts to thicken. Then add the oil in a thin steady stream while continuing to whisk until it looks like mayo.

You could maybe get someone else to hold the bowl while you whisk - a good way to get the kids involved.

Add the tomato ketchup, Tabasco, Lea & Perrins and malt whisky to the mayonnaise and put it in the fridge to cool for a few minutes.

Divide the shredded lettuce between six cold glasses and place the prawns on top.

Pour over the sauce and serve with a wedge of lemon.

TIP OF THE WEEK

If you can't face all the whisking you can use good quality mayo from a jar and add the extra ingredients to it.

ANOTHER WAY TO DO IT

Once you have mastered the basics you can change the flavour of mayonnaise by adding herbs, garlic or different flavoured vinegars such as Tarragon tarragon (târ`əgŏn), perennial aromatic Old World herb (Artemisia dracunculus) of the family Asteraceae (aster family), of the same genus as wormwood and sagebrush. .
