Chocolate man, it's easy to cast his profile.

You can't confer immortality by giving a chocolate silhouette, but you can confer delight on the recipient. Our easy technique achieves a remarkable likeness, and the silhouete makes a great just-for-fun Valentine greeting. Chocolate Silhouettes

To make a pattern, you'll need a color slide of a close-up of a person's profile.

Project the slide onto a sheet of paper so the image is 5 to 6 inches tall. Trace an outline onto the paper. Slide the pattern underneath a piece of waxed paper on a baking sheet and tape down to secure.

For each silhouette, you'll need a total of 1/2 cup (4 oz.) semisweet chocolate baking chips. Melt about half the chips in the top of a double boiler over barely simmering water. Spoon into a pastry bag fitted with a plain round tip about 1/8 inch in diameter; use it to pipe chocolate onto waxed paper along pattern lines. Chill on baking sheet until hard.

Melt remaining 1/4 cup chips. Spread into center of outline to make an even layer. Chill until hard, at least 1 hour. Invert silhouette onto a second sheet of waxed paper and peel away paper on top.

To store silhouettes, cover with a paper towel, then wrap with plastic wrap and refrigerate as long as 2 weeks (if you store longer, the chocolate may turn white). To mount into a box, tie silhouette around the neck with ribbon as we did here.
