Chocoholics get a dream dessert; Recipes.MONDAY sees the start of what must be one of the most popular weeks of the year - National Chocolate Week! And what better way for those with a sweet tooth to celebrate the event than to try out this delicious - and very different - dessert? Franco Bellomusto, executive chef at San Carlo restaurant in Temple Street, Birmingham, has dreamt up one really unusual suggestion - chocolate pizza. It's a dessert that is really popular in Italy, particularly when it is shared at the end of a family meal. And if that's not enough to satisfy your chocolate cravings, we've also included Franco's recipe for truffles with a spicy twist. CHOCOLATE PIZZA Serves 1-2 Ingredients 200g of pizza flour 5g of fresh yeast 1 cup of warm water ' teaspoon of salt 200g ricotta cheese Ricotta (pronounced /riˈkɔtːa/ in Italian) is an Italian whey cheese, meaning a product made from whey—a by-product of milk cheese making—rather than whole milk. Other whey cheeses include Gjetost. 75g dark chocolate 60g white chocolate white chocolate n. Cocoa butter combined with milk and a sweetener, often flavored with vanilla. Noun 1. white chocolate Cooking Time: 10 minutes in a very hot oven (280C). Method Mix flour, yeast, water and salt together and kneed to make a dough. Roll into a flat round to make the pizza base and cook for 8 minutes. Remove and allow to cool. Spread the ricotta cheese on the base and grate over the dark chocolate. Place back in the over for a further two minutes. Remove the pizza and grate over the white chocolate to serve. DARK CHOCOLATE CHILLI TRUFFLES Makes 40 Preparation time: 10 mins Cooking time: 5 mins - plus 2 hours to set Ingredients 250g good quality dark chocolate (70 per cent cocoa solids Cocoa solids is a term for the nonfat component of chocolate. It may also be called cocoa powder when sold as an end product. The fatty component of chocolate is cocoa butter. The separation of the two may be accomplished by a press, or by the Broma process. ) 125ml double cream 1 fresh chilli, halved and deseeded Knob of butter Cocoa powder Noun 1. cocoa powder - the powdery remains of chocolate liquor after cocoa butter is removed; used in baking and in low fat and low calorie recipes and as a flavoring for ice cream chocolate - a food made from roasted ground cacao beans for dusting Method Break the chocolate into little chunks and place in a small bowl. Put the cream and chilli halves in saucepan and bring to the boil, then turn off the heat and add the butter. Pour the cream over the chocolate chunks and leave to stand for a few minutes to melt. Remove the chillies, stir and leave for a few more minutes. Stir well, cover and refrigerate re·frig·er·ate tr.v. re·frig·er·at·ed, re·frig·er·at·ing, re·frig·er·ates 1. To cool or chill (a substance). 2. To preserve (food) by chilling. for at least two hours until set. Using a teaspoon, scoop out little balls of the truf-fle mixture and roll in the palms of your hand. Dip in cocoa powder and store in the fridge for three to four days.
