The chain was founded in 1986 by Warren Simmons, Sr. and Warren "Scooter" Simmons, Jr., when they opened their first restaurant in Alameda, California.

CYPRESS, Calif. -- Chevys Fresh Mex[R], a leading full-service, national casual Mexican restaurant chain, will open its newest location at 1000 Palisades Center Drive in the Palisades Center Mall in West Nyack, New York West Nyack is a hamlet (and census-designated place) in Rockland County, New York, United States. The population was 3,282 at the 2000 census.

The community of West Nyack is in south part of the Town of Clarkstown.

Chevys will celebrate its opening day with a private V.I.P. function giving local dignitaries who are unfamiliar with the Chevys menu and concept, a behind-the-scenes look at the kitchen, bar, dining area and providing a first-hand demonstration of the trademark El Machino[R] tortilla machine. Guests will be treated to live music from a 7-piece mariachi band and Chevys Fresh Mex[R] cuisine and signature margaritas.
