 yesterday admitted he has to resist the temptation to sample his creations.

 a 3ft-high creation from 44lb of chocolate during an eight-hour contest to be the best in the UK.

But the Edinburgh pastry chef is careful not to gorge on his handiwork.

Sebastian, ofMichelin-starred restaurant The Kitchin in Leith, said: "When you work with chocolate for hours on end, you stop eating it because it sends your blood sugar through the roof."

Sebastian will battle five chefs from across Britain for the title of UK chocolate master at the London contest next month.

He will make a huge "showpiece" figure using finest Callebaut chocolate.

It will be in the shape of a model on a catwalk because the contest's theme is "haute chocolate".

Sebastian will also create his own pralines and chocolate pastries.

If he wins, he will compete at the renowned Salon du Chocolat in Paris for the title of world chocolate master next year.

German Sebastian said: "This is an important competition because it's the only one that focuses entirely on chocolate."
