Chart House Restaurants Introduces a New Look and New Menu in Dobbs Ferry.

DOBBS FERRY, N.Y.--(BUSINESS WIRE)--Dec. 18, 1998--Chart House Enterprises, Inc. (NYSE - CHT) is pleased to announce new renovations and menu updates for 1999. The improvements in Dobbs Ferry are part of the Company's long-term, system-wide revitalization strategy to build the "New" Chart House brand. The changes are meant to inspire a new and exciting dining experience that will take Chart House into the new millennium without losing the spirit, which has endured for over three decades. The restaurant in Dobbs Ferry, located along the Hudson River, has adopted the atmosphere of its environment. Colorful sails, an indigo blue mezzanine, and a Commodore chair placed at the head of each table give the interior of Chart House a nautical feel. The blues and gold in the carpet and the newly upholstered furniture add even more of a visual variety. "We wanted to give punch to Chart House's appearance. By adding contrast in the space, we greatly enhanced the appearance with natural toned elements," says Tom Walters, Chart House President and CEO. Overall, the new look of Chart House is a "bright, new, breath of fresh air."

In addition to the restaurant's new look is an imaginative new menu. Rich Melman and Lettuce Entertain You Enterprises, Inc. were brought on as creative consultants to assist Chart House in the development of a brand new menu. "We're introducing some exciting, tasty ideas in cuisine to the Dobbs Ferry area," says Chart House General Manager, Jack Reed. Regular diners and newcomers alike will enjoy appetizers like Seared Ahi Tuna and entrees that include Sesame Crusted Salmon, Teriyaki Beef Medallions and Coconut Shrimp. And to complete any fabulous dinner, Chart House suggests its soon-to-be famous Chocolate Lava Cake, cooked to order and served warm at your table.
