Carrot Cake.


Ingredients: 375g caster sugar caster sugar

finely ground white sugar

; 250g unsalted butter; 4 eggs; 450g carrots, grated; juice of one orange;150g chopped almonds; grated rind of 2 oranges; 250g plain flour plain flour

; 1 tsp mixed spices; 1 tbsp vanilla essence; salt. For the frosting - 225g cream cheese; 65g unsalted butter; 400g icing sugar; 1 tsp vanilla essence.

Method: Heat oven to 180C/Gas 4 and grease a large cake tin. Mix the butter, orange rind and sugar to fluffy consistency and then add the eggs. Beat and add one by one..

Add carrot, almonds, vanilla essence and orange juice, before sifting in flour, bicarbonate of soda, spice and pinch of salt. Put mixture in tin and bake for about 45 minutes- 1 hour.

For frosting cream the cheese and butter until smooth, then add icing sugar and vanilla essence.

Spread generously over top of the cake..
