COOL CHILI RECIPES REALLY HEAT IT UP.Byline: Natalie Haughton Food Editor In response to a request from Norma Wishingrad, Francesca Blagdon sent along a chili recipe that she has been making for 50 years to great raves. She serves it over spaghetti. We have no idea if it's anything like the one requested from Marie Callender's, but give it a try. An interesting- sounding Chipotle Chili recipe is also included today. CHILI CON CARNE chili con carne (chĭl`ē kŏn kär`nē) [Span.,=hot peppers with meat], Mexican food popular in the United States and now manufactured and canned commercially. (Shared by Francesca Blagdon) 3 tablespoons vegetable oil 1 large onion, chopped 1 pound chopped OR ground beef 1 (16-ounce) can tomatoes 1 (8-ounce) can tomato sauce 1/2 teaspoon paprika paprika: see pepper. 1/8 teaspoon cayenne pepper OR to taste 1 bay leaf 1 tablespoon chili powder 1 clove garlic, mashed 1 teaspoon salt 1 (16-ounce) can kidney beans, rinsed and drained Heat oil in a 10-inch skillet. Add onion and beef. Cook, stirring occasionally, until browned. Drain off any excess fat. Stir in tomatoes, tomato sauce, paprika, cayenne, bay leaf and chili powder. Cover and simmer 1 hour, stirring occasionally. Add some water if too thick (or 1/2 cup wine). Add garlic, salt and beans and heat through. Recipe can be doubled. Makes 4 to 6 servings. More quick dishes Just after finishing last week's food story about getting a dish on the table fast with six ingredients or fewer, a new cookbook - ``Family Circle Quick & Easy Recipes,'' by the Editors of Family Circle (Broadway Books; $24.95) -arrived on my desk. It features more than 300 easily made creations and 75 tempting color photographs. The recipes are earmarked with icons identifying them as quick-cook, 30-minutes max, five ingredients or less, quick-prep and one-pot. TORTILLA PIE 4 (8-inch) flour tortillas 1 (16-ounce) can refried beans (1 1/2 cups) 1 cup shredded Monterey Jack cheese “Monterey Jack” redirects here. For other uses, see Monterey Jack (disambiguation). Monterey Jack is a type of semi-hard cheese using cows milk. It is commonly sold by itself, or mixed with Colby cheese to make a marbled cheese known as Colby-Jack (or Co-Jack). (4 ounces) 1 cup salsa 2 cups shredded cooked chicken Heat broiler broiler a young (about 8 weeks old) male or female chicken weighing 3 to 3.5 lb. (see note below). Coat a 10-inch microwave-safe pie plate with nonstick cooking spray. Place a tortilla in prepared pie plate. Spread with 1/3 EACH of refried beans, cheese, salsa and chicken. Top with a tortilla. Repeat layers, top with third tortilla. Repeat layers and finish with fourth tortilla. Cover with plastic wrap; microwave on high power about 8 minutes. Uncover pie and place under broiler in oven 30 seconds. To serve, cut into wedges. Makes 4 servings. NOTE: If you prefer, cover pie with foil and bake in preheated 400-degree oven 25 minutes instead of cooking in a microwave. Adjust oven to a broil when pie is baked, and proceed to broil as above. CHOCOLATE NUT & FRUIT CLUSTERS 1 (10- to 12-ounce) package milk chocolate pieces (2 cups) 3/4 cup coarsely chopped cashews, almonds OR macadamia macadamia (măk'ədā`mēə), name for the nut of the Macadamia ternifolia, an evergreen tree native to Australia, but cultivated in Hawaii. The nuts, also called Queensland nuts, are eaten roasted or raw. nuts 3/4 cup dark raisins 1/2 cup chopped dried apricots OR cranberries Line 2 baking sheets with waxed paper. Melt chocolate in top of a double boiler over barely simmering water, stirring until smooth. Remove from heat. Stir in cashews, raisins and apricots. Drop chocolate mixture by teaspoonfuls onto prepared baking sheets. Let stand until hardened, about 2 hours. Makes about 3 dozen candies. Can you help?
