 canned cherries, a reader sent along the following recipe. It sounds easy and good for warm-weather dining. Enjoy!

COLD CHERRY SOUP

(Shared by Ruth Nebron, Valley Glen)

1 (16-ounce) can pitted sour red pie cherries

1 1/2 teaspoons cornstarch cornstarch, material made by pulverizing the ground, dried residue of corn grains after preparatory soaking and the removal of the embryo and the outer covering. It is used as laundry starch, in sizing paper, in making adhesives, and in cooking.  

1/2 cup cold water

1 tablespoon sugar

2 tablespoons lemon juice

1 cup dairy sour cream

Drain cherries, placing liquid in medium saucepan. In a small mixing bowl, combine cornstarch and cold water. Mix well and add to liquid in saucepan. Heat to boiling and boil 5 minutes, stirring constantly.

Add sugar and lemon juice. Stir; remove from heat and chill. When syrup is cool, blend in Verb 1. blend in - blend or harmonize; "This flavor will blend with those in your dish"; "This sofa won't go with the chairs"

 sour cream and drained cherries until well mixed. Chill well. Serve in chilled cups. Makes 3 servings.

QUICK FIX COOKIES: Here's a recipe that I recently came across from Linda Cicero at the Miami Herald. She encountered these treats at a cookie swap and begged the baker for the recipe. Try them for a new twist on a Rice Krispies Rice Krispies (known as Rice Bubbles in Australia) is a brand of breakfast cereal that has been produced by Kellogg's since 1928. They are made of rice grain which is cooked, dried and toasted. These kernels bubble and rise in a manner which forms very thin walls.  treat. Experiment and use different flavor cake mixes, if desired. We found a chocolate cake mix a good choice, but suit your taste.

< LEMON KRISPIES

1 (18 1/2-ounce) box lemon-flavor cake mix

1/2 cup (1 stick) butter, melted

1 egg, beaten

1 cup crisp rice cereal such as Rice Krispies

Stir together dry cake mix, butter and egg in a mixing bowl until well blended. Stir in cereal. Roll dough into 1 1/2-inch balls. Place 2 inches apart on an ungreased cookie sheet.

Bake in preheated 350-degree oven 8 to 10 minutes, until edges are golden. Cool on cookie sheet 1 minute before removing to a cooling rack. Makes about 30 cookies.

MAD MIKE'S TWICE-BAKED POTATOES

4 large baking potatoes

1 cup shredded smoked Gouda OR Monterey Jack cheese “Monterey Jack” redirects here. For other uses, see Monterey Jack (disambiguation).

Monterey Jack is a type of semi-hard cheese using cows milk. It is commonly sold by itself, or mixed with Colby cheese to make a marbled cheese known as Colby-Jack (or Co-Jack).
 

1/2 cup dairy sour cream

1/3 cup picante pi·can·te  
adj.
1. Prepared in such a way as to be spicy.

2. Having a sauce typically containing tomatoes, onions, peppers, and vinegar.

1/4 cup diced cooked bacon

1/4 cup chopped green onions

1 (16-ounce) jar fire roasted chunky tomato salsa

Bake potatoes in preheated 375-degree oven until soft, about 1 hour. Remove and allow to cool slightly.

 and remove insides to bowl. Add 3/4 cup cheese, sour cream, picante sauce, bacon and green onions. Mix well.

Place under preheated broiler broiler

a young (about 8 weeks old) male or female chicken weighing 3 to 3.5 lb.
 and broil until potatoes are browned on top. Sprinkle tops with remaining 1/4 cup cheese and allow to melt under broiler, removing when cheese is bubbly. Top with salsa. Makes 4 servings.
