Readers sent along plenty of salad recipe options to fill the Sherman Oaks request for delicious and easy possibilities to serve at a summer shower. A sampling of those received follows. Robin Becerra notes that the Broccoli Salad is great. Not only is it easy to make, but even broccoli-haters have been converted after tasting it. Vinegar made from fermented apple cider. Noun 1. cider vinegar - vinegar made from cider vinegar, acetum - sour-tasting liquid produced usually by oxidation of the alcohol in wine or cider and used as a SALAD: 4 cups broccoli florets (bite-size portions) 8 slices bacon, cooked and crumbled 1/3 cup chopped red onion 1/4 cup shelled sunflower seeds 1/3 cup raisins (optional) Prepare Dressing by mixing all dressing ingredients; set aside. Combine all Salad ingredients. Add dressing; toss to coat. Chill at least 2 hours before serving. Makes about 8 (1/2-cup) servings. CHICKEN SALAD (Shared by Jan Munroe, Valencia)! DRESSING: 1/4 cup salad oil 1/4 cup red wine vinegar Noun 1. wine vinegar - vinegar made from wine vinegar, acetum - sour-tasting liquid produced usually by oxidation of the alcohol in wine or cider and used as a condiment or food preservative 3/4 teaspoon pepper 1 teaspoon salt Dash garlic powder 2 teaspoons sugar 1 1/4 teaspoons dry mustard Noun 1. dry mustard - a substance such that one to three tablespoons dissolved in a glass of warm water is a homemade emetic powdered mustard emetic, nauseant, vomitive, vomit - a medicine that induces nausea and vomiting 1/3 cup finely minced parsley SALAD: 6 boned chicken breast halves, cooked, torn into small pieces and then chilled 1/2 pound bacon, cooked and torn into small pieces 2 large tomatoes, cut up 1 medium head lettuce OR 1 head red leaf lettuce 2 avocados, cut up Sliced mushrooms Make Dressing the night before serving by mixing all dressing ingredients well. Refrigerate re·frig·er·ate tr.v. re·frig·er·at·ed, re·frig·er·at·ing, re·frig·er·ates 1. To cool or chill (a substance). 2. To preserve (food) by chilling. . For Salad, toss together all salad ingredients. Add dressing and toss well. Makes 6 servings. DILLED CHICKEN SALAD (Shared by Marion Brussel, Canyon Country) SALAD: 1 (16-ounce) package spiral pasta, cooked and drained 2 cups cubed cooked chicken 1 cup chopped celery 1/3 cup chopped onion 1 (10-ounce) package frozen peas, thawed DRESSING: 1 (1-ounce) envelope ranch salad dressing mix 2 cups (16 ounces) dairy sour cream 1 cup mayonnaise 1 cup milk 3 tablespoons minced fresh dill OR 1 tablespoon dill weed 1/2 teaspoon garlic salt Noun 1. garlic salt - ground dried garlic and salt flavorer, flavoring, flavourer, flavouring, seasoning, seasoner - something added to food primarily for the savor it imparts For Salad, in a large bowl, combine salad ingredients; mix well. Combine salad Dressing ingredients; whisk until smooth. Pour over salad; toss to coat. Cover and refrigerate at least 2 hours. Makes 10 to 11 servings. CUCUMBER SALAD (Shared by Frances Gleim, Acton) 1 (3-ounce) package lemon-flavored gelatin gelatin or animal jelly, foodstuff obtained from connective tissue (found in hoofs, bones, tendons, ligaments, and cartilage) of vertebrate animals by the action of boiling water or dilute acid. 1 cup boiling water 1 small cucumber, grated 1 small onion, grated 1 cup cottage cheese cottage cheese a soft, uncured cheese made from soured skim milk; most of the lactose is removed with the whey. Used in low-residue diets for dogs and cats. 2 teaspoons vinegar 2/3 cup mayonnaise 2/3 cup chopped pecans Dissolve gelatin in boiling water. Cool and while still liquidy add remaining ingredients. Fill fancy oiled mold and chill. Serve on a bed of fancy lettuce greens. Makes 4 servings. SUNSHINE SALAD (Shared by Sue Pearcy, Palmdale) 1 cup white rice 1 cup chopped celery 2 cups cooked ham OR turkey cubes 1 (11-ounce) can mandarin orange segments, drained 3/4 cup chopped green pepper 1/2 cup carrot slices 3/4 cup mayonnaise 1 teaspoon onion powder Onion powder is a spice used for seasoning in cooking. It is made from finely ground dehydrated onions, mainly the pungent varieties of bulb onions, which causes the powder to have a very strong smell. 1/8 teaspoon pepper 1 (8-ounce) can crushed OR cubed pineapple, drained Prepare rice according to according to prep. 1. As stated or indicated by; on the authority of: according to historians. 2. In keeping with: according to instructions. 3. package directions. Chill. Combine with all remaining ingredients; mix lightly. Chill. Serve with bread, rolls or garlic toast. CURRY CHICKEN SALAD (Shared by Elinor Koby, Valencia) 2 cups mayonnaise 2 tablespoons lemon juice 2 1/2 tablespoons soy sauce 1 rounded tablespoon curry powder curry powder n. A pungent seasoning prepared from cumin, coriander, turmeric, and other spices. Noun 1. curry powder - pungent blend of cumin and ground coriander seed and turmeric and other spices 1 tablespoon onion juice 1 tablespoon chopped chutney chut·ney n. A pungent relish made of fruits, spices, and herbs. [Hindi ca n 3 cups diced, cooked chicken 1 1/2 cups chopped celery 1 (6-ounce) can water chestnuts, drained and sliced 2 cups seedless Seed´less a. 1. Without seed or seeds. Adj. 1. seedless - lacking seeds; "seedless grapefruit" seedy - full of seeds; "as seedy as a fig" seedless adj → white grapes 1 (20-ounce) can pineapple chunks, well drained 1/2 cup slivered almonds, toasted Combine mayonnaise, lemon juice, soy sauce, curry powder, onion juice and chutney. Toss with remaining ingredients except almonds. Refrigerate overnight. Sprinkle with almonds. Serve with banana bread. Makes 8 servings. CHICKEN-CRANBERRY MOLDED SALAD (Shared by Margaret Walsh, Van Nuys) CRANBERRY LAYER: 1 package unflavored gelatin 1/4 cup water 2 (1-pound) cans whole cranberries 1 (8-ounce) can crushed pineapple (1 cup) 1/3 cup nuts CHICKEN LAYER: 1 package unflavored gelatin 1/4 cup water 2 cups cooked cubed chicken 3/4 cup chopped celery 3 tablespoons chopped fresh parsley 1 mayonnaise 1/2 cup undiluted evaporated milk 1 teaspoon Accent 1/2 teaspoon salt For Cranberry Layer, soften gelatin in water. Dissolve over hot water. Then add remaining Cranberry Layer ingredients. Turn into mold and chill until partially set. For Chicken Layer, soften gelatin in water. Dissolve over hot water. Add remaining Chicken layer ingredients; mix well. Pour over Cranberry Layer. Chill until set. Makes 6 to 8 servings. BEAN SPROUT-KRAUT SALAD (Shared by Mary Filippone, Saugus) 1/2 cup sugar 1/2 cup vinegar (white preferred) 1/4 cup salad oil 1 (16-ounce) can sauerkraut, well drained 2 cups fresh bean Noun 1. fresh bean - beans eaten before they are ripe as opposed to dried common bean - any of numerous beans eaten either fresh or dried green bean - immature bean pod eaten as a vegetable yellow bean, wax bean - snap beans with yellow pods sprouts, rinsed and drained 1/2 cup sliced celery 1/2 cup finely chopped onion 2 tablespoons finely chopped green pepper 1 (2-ounce) jar pimento pimento or allspice, common names for a tree (Pimenta dioica or P. officinalis) of the family Myrtaceae (myrtle family) cultivated in the West Indies for its dried unripe berries, used medicinally and as a spice (also called , drained and chopped In a screw-top jar, for dressing, combine sugar, vinegar and oil. Cover and shake to dissolve sugar. Pour over remaining ingredients; tossing to coat. Cover and refrigerate overnight. Serve on lettuce-lined plates.
