COOK'S CORNER DIFFERENT ROLLS, SAME NOSTALGIA.

Although Sandy Wynn is out of luck as far as the cinnamon roll recipe she was searching for on the menu from SkyHouse Restaurant near Lake Arrowhead Lake Arrowhead may refer to:

 some 40 years ago, here is a basic recipe that she and other readers might enjoy from one of Better Homes and Gardens' newest cook books. Maybe it will stir some taste memories for her.

CINNAMON ROLLS 4 to 4 1/3 cups all-purpose flour

1 package active dry yeast

1 cup milk

1/3 cup plus 1/2 cup granulated sugar Noun 1. granulated sugar - sugar in the form of small grains
powdered sugar - sugar granulated into a fine powder

refined sugar, sugar - a white crystalline carbohydrate used as a sweetener and preservative

granulated sugar 
 

1/3 cup plus 3 tablespoons butter OR margarine

1/2 teaspoon salt

2 eggs

2 teaspoons ground cinnamon

Powdered Sugar Icing

In a large mixing bowl, combine 2 cups flour and yeast; set aside.

In a medium saucepan, heat and stir milk, 1/3 cup granulated sugar, 1/3 cup butter and salt just until warm (120 to 130 degrees F), and butter almost melts. Add milk mixture to dry mixture along with eggs.

Beat with an electric mixer on low to medium speed 30 seconds, scraping bowl. Beat on high speed 3 minutes. Using a wooden spoon, stir in as much of remaining flour as you can.

Turn dough onto a floured surface. Knead knead

 in enough remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total). Shape dough into a ball. Place dough in a lightly greased bowl; turn once to grease dough. Cover and let rise in a warm place until double in size (about 1 hour).

Punch dough down. Turn onto a lightly floured surface. Divide in half. Cover and let rest 10 minutes. Lightly grease 2 (9x1 1/2-inch) round baking pans.

Roll each portion of dough into a 12x8-inch rectangle. Brush remaining 3 tablespoons butter, melted, over dough. Combine remaining 1/2 cup granulated sugar and cinnamon; sprinkle over dough. Roll up, jellyroll style, starting from a long side. Seal seam. Slice each roll into 12 equal pieces. Place in prepared pans. Cover and let rise in a warm place until nearly double (about 30 minutes).

Bake in preheated 375-degree oven 20 to 25 minutes or until golden. Cool slightly; remove from pans. Drizzle with Powdered Sugar Icing. If desired, serve warm. Makes 24 rolls.

POWDERED SUGAR ICING: Combine 1 cup powdered sugar, 1/2 teaspoon vanilla and 1 tablespoon ta·ble·spoon

CINNAMON AND CHOCOLATE ROLLS: Prepare as directed, except add 3/4 cup miniature semisweet sem·i·sweet

During my food travels recently, I came across this bar cookie recipe from a Florida food columnist - and thought it might be of interest. The cake mix forms a crust and the cookies have a meringuelike topping with cream cheese, nuts and chocolate chips Chocolate chips are small chunks of chocolate. They are often sold in a round, flat-bottomed teardrop shape (similar to a Hershey's Kiss). They are available in numerous sizes, from large to miniature, but are usually around 1 cm in diameter. .

, and everyone who tastes them wants to know how to make them, noted the columnist, adding that best of all they're easy. Try varying the cake mix flavor and other ingredients. Instead of yellow, use a chocolate cake mix with a tablespoon of instant espresso coffee powder added to the dry ingredients, and then substitute almonds for the walnuts.

1 (18.25-ounce) box yellow cake mix

3 eggs

1 stick butter, melted

1 cup chopped walnuts OR pecans

1 cup semisweet chocolate chips

4 cups (a 1-pound box) powdered sugar

1 (8-ounce) package cream cheese, softened

Beat cake mix briefly with 1 egg and butter, until just blended. Press into a 9x13-inch baking pan lightly coated with vegetable spray. Sprinkle nuts and chocolate chips on top and lightly press into first layer. Beat together powdered sugar, remaining 2 eggs and cream cheese. Spoon over top, spreading mixture evenly to edges.

Bake in preheated 350-degree oven 1 to 1 1/4 hours or until top is puffed and as browned as you like. Cool and cut into bars. Makes 30 servings.
