It's from Linda Cicero, a columnist at the Miami Herald. CHOCOLATE DECADENCE CAKE: 1 pound dark sweet chocolate, broken into pieces 10 tablespoons butter 4 eggs 1 tablespoon sugar 1 tablespoon all-purpose flour FROSTING frosting the slight graying of the haircoat around the face, particularly muzzle, in dogs with aging and as a regular feature of some breeds such as the Belgian shepherd dog. : 2 cups heavy whipping cream Noun 1. heavy whipping cream - cream with a fat content of 48% or more double creme cream - the part of milk containing the butterfat 2 tablespoons powdered sugar 1 teaspoon vanilla CHOCOLATE WEDGES: 3 ounces bittersweet bittersweet, name for two unrelated plants, belonging to different families, both fall-fruiting woody vines sometimes cultivated for their decorative scarlet berries. chocolate Butter an 8-inch round springform pan. Place an 8-inch round of wax paper in pan. Butter paper well and dust with flour. For Cake, melt chocolate and butter in a heavy-bottomed saucepan over low heat. Mix to blend. Cool. Place eggs and sugar in bowl of an electric mixer over hot water, stirring with a whisk until sugar is dissolved and eggs are warm to touch. Remove bowl to mixer and beat at high speed until the whipped eggs are cool and tripled in volume. Fold in flour. Fold 1/2 of egg mixture into melted chocolate, then remaining half. Pour batter into prepared pan. Bake in preheated 425-degree oven 15 minutes. Remove from oven and let cool in pan. Put cake, still in pan, in refrigerator or freezer until very firm. Carefully remove cake from pan (release springform sides), invert in·vert v. 1. To turn inside out or upside down. 2. To reverse the position, order, or condition of. 3. To subject to inversion. n. Something inverted. on to a serving plate and remove wax paper. For Frosting, beat ingredients together in bowl with an electric mixer until thick enough to hold stiff peaks. Working quickly, frost tops and sides of cake with whipped cream mixture. Refrigerate re·frig·er·ate tr.v. re·frig·er·at·ed, re·frig·er·at·ing, re·frig·er·ates 1. To cool or chill (a substance). 2. To preserve (food) by chilling. while you make Chocolate Wedges. To make Chocolate Wedges, line bottom of an 8-inch round pan with wax paper. Melt chocolate in microwave oven or over boiling water. Stir gently and pour into prepared pan, tilting gently to spread chocolate evenly. Cool until firm but not hard. Remove from pan on wax paper and cut into 12 wedges. Peel paper off wedges and cover top of cake with them like slices of pie. Refrigerate until serving time. Makes 12 servings. Refrigerate any leftovers. MORE CHOCOLATE And while we're on a chocolate kick, here's a rather different recipe I recently came across from a new cookbook. It's intriguing and might make a dessert conversation piece sometime. BITTERSWEET CHOCOLATE BRUSCHETTA bruschetta Noun an Italian open sandwich of toasted bread topped with olive oil and tomatoes, olives, etc [Italian] 4 slices rustic-style white bread, 3/4 inch thick 3 tablespoons butter, melted, OR substitute almond, hazelnut OR other nut oil Kosher salt 7 ounces good-quality bittersweet chocolate, coarsely chopped 1 pint fresh strawberries, rinsed, hulled and thinly sliced 1/4 cup toasted and coarsely chopped hazelnuts Heat a grill until medium-hot. Brush both sides of bread with melted butter and sprinkle lightly with salt. Grill one side until toasted with golden brown grill marks. Flip bread and top each slice with chopped chocolate. Grill until chocolate is melted (cover grill briefly, if desired, to melt chocolate more quickly) and bread is toasted on the bottom. Remove bread from grill, top with sliced strawberries and sprinkle with chopped hazelnuts. Makes 4 servings. VARIATIONS: Substitute an equal amount of raspberries OR 2 bananas for strawberries. Substitute chopped walnuts OR almonds for hazelnuts. Substitute milk chocolate or gianduja (hazelnut-flavored chocolate) for bittersweet chocolate.
