COOK'S CORNER CHICKEN IN THE IHOP STYLE.

ROASTED HERB CHICKEN

1 lemon, grated peel and juice

1 tablespoon fresh thyme OR 1 teaspoon dried thyme

1/2 teaspoon fresh rosemary OR 1/4 teaspoon dried rosemary

1 teaspoon fresh oregano oregano (ərĕg`ənō), name for several herbs used for flavoring food. A plant of the family Labiatae (mint family), Origanum vulgare,  OR 1/2 teaspoon dried oregano

2 tablespoons extra virgin olive oil

1 tablespoon minced garlic

1 tablespoon freshly ground coarse black pepper

1 teaspoon kosher salt OR sea salt

1 (3- to 3 1/2-pound) whole roasting chicken, rinsed

In a medium stainless steel bowl, combine lemon peel and juice. Mince herbs, if using fresh, and add herbs to bowl with lemon along with remaining ingredients, except chicken. Mix well. Slightly pull skin from breast section of chicken and place a bit of prepared herb mixture between breast meat and skin. Rub remaining mixture over chicken, coating well.

Place a chicken roaster in a roasting pan and place chicken upright on roaster. (OR roast chicken on a rack in a baking pan.) Bake in a preheated 350-degree oven 50 minutes, or until chicken has reached 165 degrees F or is cooked through. Makes 4 servings.

CANDY BAR BARS

18 tablespoons (2 1/4 sticks) unsalted butter, softened

1 1/2 cups sugar

2 large eggs

3/4 teaspoon vanilla

3 cups all-purpose flour

3/4 teaspoon baking soda

1/4 teaspoon salt

10 ounces candy bars, chopped into 1/2-inch pieces

Position a rack in center of oven. Line a 9x13-inch baking pan with greased foil, allowing it to overhang the 2 narrow ends of pan by about 2 inches. Using an electric mixer, beat together butter and sugar until smooth. Beat in eggs and vanilla. Add sifted flour, baking soda and salt; stir to blend. Add candy and stir to combine. Spread batter evenly in pan. Bake in preheated 350-degree oven about 25 to 30 minutes, until top is firm when lightly tapped and a toothpick toothpick,
